This is a wonderful recipe we enjoyed last night, very satisfying! Had this along with the above salad. I didn't take part out and blend, didn't want to fuss with it. I added the 1/2 and 1/2 when I added the zucchinis. To thicken it up next time I make this I will use part of the 1/2 and 1/2 and add corn starch to thicken it up. Also used all fresh herbs instead of dried. Be careful not to add too much cayenne pepper, it will take over the other wonderful spices you have added.

Actually it's not pumpkin seeds it's PEPITAS seeds, sorry bout that.

Made this a few days ago and it tastes great!
Ingredients
2T.extra virgin oil
15oz cannellini beans (drained)
15oz can fire roasted diced tomatoes
1/3C dry elbow macaroni
1 medium onion (finely chopped)
1-2 zucchini (roughly chopped
1 carrot (roughly chopped)
1 clove garlic or more (minced)
1T thyme (chopped) fresh if you can
1 C spinach ( roughly chopped)
1 quart vegetable broth
freshly grated Parmesan cheese (optional)
Instructions:
In a large pot over high heat, add olive oil, garlic, thyme, and onions and cook for 3-4 minutes, until onions are translucent.
Add all other ingredients- EXCEPT the macaroni- and bring to a boil.
Reduce to a simmer, cover and cook for 10 minutes.
Add macaroni, bring the soup back up to a boil, reduce to a simmer, cover and cook for an additional 10 minutes.
Serve hot and topped with a little freshly grated Parmesan cheese
